Here's a quick recipe for Makhana Mango Barfi that you can make in under 10 minutes:
Ingredients:
•1 cup Makhana (fox nuts/lotus seeds)
•1 cup mango pulp (fresh or canned)
•1/2 cup condensed milk
•1/2 cup milk powder
•2 tablespoons ghee (clarified butter)
•1/4 teaspoon cardamom powder
•A few chopped nuts for garnish (optional)
Instructions:
1:Roast the makhana: Heat a non-stick pan over medium heat. Add the Makhana and dry roast until they become crunchy. This should take about 3-4 minutes. Keep stirring to prevent them from burning. Once done, let them cool and then grind them into a coarse powder.
2: Prepare the mixture: In the same pan, add ghee and let it melt. Add the mango pulp and cook for 2-3 minutes until it thickens slightly.
3:Mix ingredients: Add the condensed milk and milk powder to the mango pulp. Stir continuously to avoid lumps.
4: Combine the makhana: Add the ground Makhana powder and cardamom powder to the mango mixture. Keep stirring until the mixture thickens and starts to leave the sides of the pan. This should take about 2-3 minutes.
5: Set the barfi: Grease a small tray or plate with ghee. Pour the mixture onto the tray and spread it evenly. Garnish with chopped nuts if desired. Let it cool and set for a few minutes.
6:Cut and serve: Once the mixture is set, cut it into desired shapes (squares or diamonds) and serve.
Enjoy your quick and delicious Makhana Mango Barfi!
