How to make ragasthani gatte ki sabzi...


 Rajasthani Gatte Ki Sabzi is a traditional dish from Rajasthan, India, made with gram flour (besan) dumplings cooked in a spicy yogurt-based gravy. Here's how you can make it:

Ingredients:

1:For the gate(Dumplings).
•Gram flour (Besan) - 1 cup
•Red chili powder - 1/2 tsp
•Turmeric powder - 1/4 tsp
•Carom seeds (Ajwain) - 1/2 tsp
•Salt - to taste
•Oil - 2 tbsp
•Water - as needed

2: For the gravy. 
•Yogurt (curd) - 1 cup
•Gram flour (Besan) - 1 tbsp
•Red chili powder - 1 tsp
•Turmeric powder - 1/2 tsp
•Coriander powder - 1 tbsp
•Garam masala - 1/2 tsp
•Asafoetida (Hing) - a pinch
•Cumin seeds - 1/2 tsp
•Mustard seeds - 1/2 tsp
•Fenugreek seeds - 1/4 tsp
•Green chilies - 2, slit
•Ginger - 1 inch, finely chopped
•Garlic - 4-5 cloves, finely chopped
•Salt - to taste
•Oil - 2-3 tbsp
•Water - as needed
•Fresh coriander leaves - for garnishing

Instructions:

1: Making the gatte(Dumplings).
•In a bowl, mix gram flour, red chili powder, turmeric powder, carom seeds, salt, and 2 tbsp of oil.
•Add water little by little and knead into a stiff dough.
•Divide the dough into small portions and roll them into cylindrical shapes (about the size of your finger).
•Boil water in a pan, and once it starts boiling, add the rolled dough pieces.
•Let them cook for about 10-12 minutes until they float on top and are cooked through.
•Remove them from water, let them cool, and cut them into 1/2 inch pieces.

2: Preparing the gravy. 
•In a bowl, whisk the yogurt with 1 tbsp of gram flour. This helps prevent curdling.
•Add red chili powder, turmeric powder, coriander powder, garam masala, and salt to the yogurt mixture and mix well.
•Heat oil in a pan, and add asafoetida, cumin seeds, mustard seeds, and fenugreek seeds. Let them splutter.
•Add slit green chilies, chopped ginger, and garlic. Sauté until the raw smell goes away.
•Lower the heat and add the yogurt mixture. Stir continuously to prevent curdling.
•Add water to adjust the consistency of the gravy.
•Once the gravy starts boiling, add the gatte pieces to it.

•Cook for another 10-15 minutes on a low flame until the gatte absorb the flavors.

•Garnish with fresh coriander leaves.

3:Serve. 

Serve hot with roti, naan, or steamed rice.
